Beef and Vegetable Soup (A bean-less paleo chili)

Ingredients

  • 1/2 lb spicy sausage
  • 1/2 lb ground beef
  • 1/2 large onion diced
  • 3 large zucchini cut
  • 1 large yam diced
  • 4 sweet mini bell peppers diced
  • 6 carrots peeled and diced
  • 6 stocks celery diced
  • 11/2 Tbs minced garlic
  • 32 ounces chicken or vegetable stock
  • 2 cans diced tomatoes
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 2 tsp chili powder
  • 1 tsp oregano

Instructions

  • Brown sausage and ground beef.
  • When meat is almost done, add in garlic and onions. Add zucchini, carrots, and peppers in, cook until just under tender.
  • Put all other ingredients in a large pot, add in rest of ingredients.
  • Bring to a boil
  • Turn down and let simmer until vegetables are tender and flavors have had a chance to mix (30 mins)

Notes

The flavor from my vegetables was so good, and the sausage I used had a lot of flavor, so I did not need any salt, pepper, or too many spices. Taste and adjust according to your taste.
