Ingredients
1/2lbspicy sausage
1/2lbground beef
1/2large onion diced
3large zucchini cut
1large yamdiced
4sweet mini bell peppersdiced
6carrotspeeled and diced
6stocks celery diced
11/2Tbsminced garlic
32ounceschicken or vegetable stock
2cans diced tomatoes
1tspcumin
1/2tsppaprika
2tspchili powder
1tsporegano
Instructions
Brown sausage and ground beef.
When meat is almost done, add in garlic and onions. Add zucchini, carrots, and peppers in, cook until just under tender.
Put all other ingredients in a large pot, add in rest of ingredients.
Bring to a boil
Turn down and let simmer until vegetables are tender and flavors have had a chance to mix (30 mins)
Notes
The flavor from my vegetables was so good, and the sausage I used had a lot of flavor, so I did not need any salt, pepper, or too many spices. Taste and adjust according to your taste.
