Day 17: Cut The Fat & Southwest Guac with Roasted Garlic and Tomatoes

This mouthwatering Southwest guacamole is the perfect snack, topping, or dip.

Ingredients

  • 5 avocado
  • 1/2 cup corn kernels
  • 3 sweet mini peppers
  • 1/4 large white onion
  • 1 large jalapeno
  • 3 small tomatoes roma or campari
  • 2 Tbs minced garlic
  • Juice of 1 lime
  • 1/2 cup chopped cilantro
  • 1 1/2 tsps garlic salt

Instructions

  • Chop your peppers, onion, and tomatoes into small pieces
  • Preheat oven to 475
  • Put onions, peppers, garlic, tomatoes, and corn on a baking sheet and roast in oven for about 10 minutes
  • Take 3 avocados and pit them and use a potato masher or guac masher to mash them up, mix into finely chopped cilantro, garlic salt, and lime juice
  • Take the other 2 avocados and cut into small pieces, but do not mash them.
  • Let veggies cool some, then mix it all together.
