Day 17: Cut The Fat & Southwest Guac with Roasted Garlic and Tomatoes
This mouthwatering Southwest guacamole is the perfect snack, topping, or dip.
- 5 avocado
- 1/2 cup corn kernels
- 3 sweet mini peppers
- 1/4 large white onion
- 1 large jalapeno
- 3 small tomatoes roma or campari
- 2 Tbs minced garlic
- Juice of 1 lime
- 1/2 cup chopped cilantro
- 1 1/2 tsps garlic salt
Chop your peppers, onion, and tomatoes into small pieces
Preheat oven to 475
Put onions, peppers, garlic, tomatoes, and corn on a baking sheet and roast in oven for about 10 minutes
Take 3 avocados and pit them and use a potato masher or guac masher to mash them up, mix into finely chopped cilantro, garlic salt, and lime juice
Take the other 2 avocados and cut into small pieces, but do not mash them.
Let veggies cool some, then mix it all together.
