Day 18: Cook at Home & Coconut Lime Shrimp

  • 1 Lb of large Shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 Tbs minced garlic
  • 1/4 cup of coconut milk
  • 1/4 teaspoon salt
  • 1/2 fresh lime juice and rind
  • Chopped fresh basil to taste


  • Heat oil in a saute pan on medium high heat, and add garlic, saute for 1-2 minutes, until slightly browned
  • Add coconut milk, lime juice, and lime rind to the pan, and cook down for about a minute.
  • Clean and devein shrimp, and toss with salt
  • Add shrimp to pan, and cook until pink.
  • Chop fresh basil, and toss over the top of the shrimp.
  • Serve immediately
