Day 18: Cook at Home & Coconut Lime Shrimp
Creamy coconut, tangy lime, rich garlic, and shrimp combine for a flavorful meal that is fast and easy.
- 1 Lb of large Shrimp peeled and deveined
- 1 tablespoon olive oil
- 1/2 Tbs minced garlic
- 1/4 cup of coconut milk
- 1/4 teaspoon salt
- 1/2 fresh lime juice and rind
- Chopped fresh basil to taste
Heat oil in a saute pan on medium high heat, and add garlic, saute for 1-2 minutes, until slightly browned
Add coconut milk, lime juice, and lime rind to the pan, and cook down for about a minute.
Clean and devein shrimp, and toss with salt
Add shrimp to pan, and cook until pink.
Chop fresh basil, and toss over the top of the shrimp.
