Bean Salsa with Honey Lime Vinaigrette

Bean salsa is filled full of hearty beans, sweet corn and tomatoes, crunchy onions and buttery avocados drizzled with honey lime vinaigrette.

Ingredients

  • 2-3 cups grape tomatoes quartered
  • 1 jalapeno seeds removed, chopped
  • 1/2 yellow onion
  • 1/2 cup chopped cilantro
  • 1 15 ounce can black beans
  • 1 15 ounce can pinto beans
  • 1 15 ounce can navy beans
  • 1 15 ounce can corn kernels
  • 2 red sweet mini peppers
  • 1 avocado chunked

Honey Lime Vinaigrette

  • 2 Tbs olive oil
  • 2 Tbs honey
  • 2 limes juiced
  • 1 Tbs red wine vinegar
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Drain and rinse beans
  • Drain corn
  • Quarter tomatoes, chop jalapenos and sweet mini peppers, chunk avocado, and finely chop cilantro
  • Mix all Honey Lime Vinaigrette ingredients together in a small bowl, and whisk until incorporated.
  • In a large bowl, combine chopped veggies, rinsed and drained beans, and drained corn kernels
  • Pour vinaigrette over top
  • Stir until everything is mixed up nicely
  • Refrigerate 30 minutes to let flavors mingle
  • Enjoy with chips, pita slices, on top of a salad, or with a spoon!
