Bean Salsa with Honey Lime Vinaigrette
Bean salsa is filled full of hearty beans, sweet corn and tomatoes, crunchy onions and buttery avocados drizzled with honey lime vinaigrette.

- 2-3 cups grape tomatoes quartered
- 1 jalapeno seeds removed, chopped
- 1/2 yellow onion
- 1/2 cup chopped cilantro
- 1 15 ounce can black beans
- 1 15 ounce can pinto beans
- 1 15 ounce can navy beans
- 1 15 ounce can corn kernels
- 2 red sweet mini peppers
- 1 avocado chunked
Honey Lime Vinaigrette
- 2 Tbs olive oil
- 2 Tbs honey
- 2 limes juiced
- 1 Tbs red wine vinegar
- 1 tsp salt
- 1 tsp black pepper
Drain and rinse beans
Drain corn
Quarter tomatoes, chop jalapenos and sweet mini peppers, chunk avocado, and finely chop cilantro
Mix all Honey Lime Vinaigrette ingredients together in a small bowl, and whisk until incorporated.
In a large bowl, combine chopped veggies, rinsed and drained beans, and drained corn kernels
Pour vinaigrette over top
Stir until everything is mixed up nicely
Refrigerate 30 minutes to let flavors mingle
Enjoy with chips, pita slices, on top of a salad, or with a spoon!
