In a small bowl mix together Marinade ingredients.
Add pork roast to slow cooker, and dump marinade sauce over top
Add frozen mango to slow cooker
and Cook on high 4-6 hours or low for 7-8 hours
When finished cooking, shred pork and set aside
Chop onions and cilantro, and combine in medium sized bowl, stir in lime juice and a pinch of salt, set aside
Spray a griddle with cooking spray and heat 300 degrees,
Once hot, place corn tortillas on the griddle and sprinkle with cheese and a couple TBS of the shredded mango pork
When tortilla starts to get crispy, remove from griddle, top with onion and cilantro salsa, and serve!
