Rotisserie Chicken Noodle Soup

Easy and insanely delicious Rotisserie Chicken Noodle Soup. Flavorful chicken, delicious vegetables, and flavorful broth. This is perfect cold weather soup!

  • 1 rotisserie chicken
  • 5-6 cups water
  • 15 ounces of canned chicken stock
  • 1 Tbs olive oil
  • 1 onion diced
  • 2 cups carrots diced up
  • 2 cups celery diced up
  • 1 tsp parsley
  • 1 tsp oregano
  • 1 tsp onion powder
  • a pinch of cayenne
  • 8-10 ounces wide egg noodles
  • Salt to taste


  • Remove the meat from your rotisserie chicken
  • Put bones in a soup pot with about 5-6 cups of water and bring to a boil, then turn heat way down, cover and let simmer for an hour (If you don't want to make your own stock, feel free to skip this step and the next one, and just remove water, and use more canned chicken stock)
  • Then remove the bones/strain the broth, so all you have is a really tasty stock.
  • Next, get a new pot, and put olive oil in the bottom, heat it, and saute your onions, carrots, and celery for a few minutes, until onions are translucent. Usually takes about 5 minutes.
  • Stir in your parsley, oregano, onion powder, and cayenne.
  • Then add in your homemade stock and canned stock
  • Bring the pot to a boil over medium heat.
  • Add in your egg noodles and cook for about 5 minutes.
  • Shred the rotisserie chicken meat you removed from the bones, and add it to your soup pot.
  • Salt to your taste preference
  • Enjoy!


Skip making your own stock and just use about 10 cups of canned chicken stock. You will lose a little bit of the yummy rotisserie chicken flavor, but it will cut an hour out of your prep time.
If you want to store any of it for later, consider using an ice-bath to stop the cooking process!
