BELT with Cheese for Non-GMO Month!

This delicious sandwich has salty bacon, creamy egg yolks, crispy lettuce, tangy tomatoes, spicy mayo, and flavorful cheddar cheese all loaded onto crunchy toasted bread.

Ingredients

  • 8 slices Thick cut bacon
  • 8 slices bread of choice
  • 2 large tomatoes
  • 4 green lettuce leaves
  • 4 slices Rumiano Mild Cheddar Cheese
  • 4 large eggs
  • 1/4 cup mayo
  • 2 tsps hot sauce
  • Salt and pepper

Instructions

  • Pull out your griddle and cook your bacon to crispy
  • Remove bacon, and put on a plate with paper towels to catch the grease
  • On the same griddle, fry your eggs until desired yolk consistency is reached
  • Remove eggs, and set aside.
  • Put bread on griddle, if there is still bacon grease, cook toast right on that, if there is not, lightly butter bread to help it crisp up and turn brown.
  • Put Rumiano Cheese on bread so it can warm and start to melt while bread gets toasty.
  • Slice tomatoes and wash lettuce leaves.
  • Mix together mayo and hot sauce, and put desired amount on top piece of bread. Layer bacon, egg, tomato, and lettuce over bread and cheese, and top with other slice of bread.
  • Serve immediately!
