Ingredients

  • 1 bag Alexia Onion Rings
  • 1 1/2 lbs beef skirt steak or flank steak cut thin
  • 1 Tbs olive oil
  • 1/2 each Red Yellow, and Orange peppers
  • 1 cup sliced white mushrooms
  • Corn tortillas for serving 5-10 total

Fajita Sauce

  • 1/2 cup soy sauce
  • 1/3 cup fresh lime juice
  • 2 Tbs minced garlic
  • 1/2 tsp onion powder
  • 1 tsp cumin
  • 1 Tbs chili powder
  • 2 Tbs brown sugar
  • 2 Tbs Olive Oil extra virgin

Toppings

  • Tomatoes
  • Sour Cream
  • Avocado
  • Cheese
  • 2 cups Alexia Crinkle Cut Fries about half the bag
  • 1 chicken breast about 1 heaping cup chopped into bite sized pieces
  • 1 tbs olive oil
  • 2 Tbs Sweet Chili Sauce
  • 1 tsp Sriracha
  • 1 Tbs honey
  • 1/2 cup shredded mozzarella
  • 1/2 cup Pickled Vegetables I used this simple brine and carrots, sweet mini peppers, cilantro, and cucumbers
  • 1/2 cup cabbage

Instructions

  • Mix together fajita sauce ingredients, and marinate thinly sliced beef in the sauce for minimum 1 hr, overnight is best.
  • Bake onion rings according to the package directions
  • Heat a cast iron skillet on medium-high heat, add in 1 tbs olive oil, mushrooms, and let cook 1-2 minutes, then add in beef and peppers, and toss until peppers are tender and beef is browned
  • Remove meat and veggie mixture from skillet, place cooked onion rings in skillet, top with the beef and pepper mixture.
  • Enjoy served with toppings and tortillas. If desired, add cheese and put in oven on broil for 2-3 minutes before serving!
  • Bake the crinkle fries in the oven according to package directions
  • While fries are baking, cut your chicken breast into bite sized pieces
  • Heat your skillet on medium high heat, add in olive oil and chicken
  • Put sweet chili sauce, sriracha, and honey over the top, toss well, and cook until chicken is done (5-6 minutes)
  • Remove from heat, and take chicken out of the skillet
  • Your fries should be done, so remove them from the oven, and turn the oven on to broil on high.
  • Add cooked fries to the bottom of the skillet, layer on cheese and chicken, then pop in the oven until cheese is melted and starting to brown.
  • Top with pickled veggies and cabbage and enjoy!
