- 2 Tbs Olive Oil
- 2 cups Potatoes Goes faster if you use the pre-prepared kind like Simply Potatoes
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 3/4 cup Hormel Pepperoni Minis
- 1 cup chopped asparagus
- Salt and Pepper
- 1 large egg
Heat a skillet
Put the olive oil in it, add the cubes potatoes to start browning the edges and crisping them up.
Cut your green peppers and onion, and add them as well.
Cook 3-5 minutes until starting to soften
Add in asparagus and Hormel Pepperoni Minis
Stir well, and season with salt and pepper.
Cover and let cook a few more minute to soften everything up
Meanwhile, in a separate skillet, fry an egg, then place over the top and serve.
