- 2 pkg House Foods Tofu Shirataki Fettuccine shape
- 1 avocado pitted
- 2 Tbsp light cream cheese
- a few basil leaves
- dash garlic powder
- salt and pepper to taste
- 1 tsp olive oil
- juice from 1/2 lemon
- parmesan cheese optional topping
Prepare Tofu Shirataki according to package instructions. Cut into manageable size.
In the bowl of a food processor add avocado, cream cheese, basil leaves, lemon juice and olive oil. Puree until smooth.
In a pan over medium heat, combine avocado mixture and noodles. Heat for 1 minute. Add salt, pepper and garlic powder. Top with parmesan cheese and serve.
