Chocolate Fudge Protein Waffles

Chocolate fudge protein waffles topped with strawberries, whipped cream, and chocolate sauce for a protein packed, good-for-you, and delicious breakfast or dessert!

Ingredients

  • 7 egg whites
  • 1 tsp Stevia
  • 2 scoops EAS® Lean 15™ Chocolate Fudge Protein Powder
  • 1/2 cup oats ground into flour

Toppings

  • Fresh strawberries
  • Fresh made whipped cream 4 ounces whipping cream, 1/2 tsp Stevia, blend until desired consistency is reached, about 30 seconds
  • Chocolate sauce optional

Instructions

  • Beat 7 egg whites in a mixer on high for about 45 seconds.
  • Grind oats in a blender until they are a flour, then add oat flour, Stevia, and EAS® Lean 15™ Chocolate Fudge Protein Powder to the mixer
  • Mix for another 2 minutes or so while you are heating your waffle iron
  • Pour approximately 1/2 cup batter into sprayed waffle iron
  • Cook 4-6 minutes until puffy and desired crispiness is reached.

Notes

Spray waffle iron between each waffle if they are sticking
*For crunchier waffles, let cook longer
***Only fill iron about 1/2 way so that it does not puff up and spill over.
***Beating your eggs longer will result in airier, lighter, puffier waffles
****You can use as little as 1/4 cup oat flour and achieve great results. I opted for 1/2 cup so they would be more filling, and a thicker, heavier consistency, which is what we like.
***** Top with warmed nut butters for even more protein and a healthier topping alternative.
