Ingredients

  • 6 Russet potatoes peeled and diced into 1 1/2 centimeter cubes
  • 4 eggs hard boiled
  • 1/2 cup sweet onion finely diced
  • 1/4 cup sweet relish
  • Salt and pepper to taste
  • 1/2 cup mayo
  • 1 Tbs Heinz Yellow Mustard
  • 1 Tbs Sweet Pickle Juice
  • 1 tsp granulated sugar
  • 2 green onions

Instructions

  • In a 4 quart pot, boil diced potatoes until just soft, but not mushy (around 7-10minutes), drain and set aside
  • Peel and dice hard boiled eggs
  • In a large bowl, mix together onions, mustard, relish, salt and pepper, mayo, pickle juice, and sugar.
  • Once potatoes are done cooking, mix them and eggs into sauce mixture
  • Refrigerate until completely chilled through
  • Garnish with green onions
