- 6 Russet potatoes peeled and diced into 1 1/2 centimeter cubes
- 4 eggs hard boiled
- 1/2 cup sweet onion finely diced
- 1/4 cup sweet relish
- Salt and pepper to taste
- 1/2 cup mayo
- 1 Tbs Heinz Yellow Mustard
- 1 Tbs Sweet Pickle Juice
- 1 tsp granulated sugar
- 2 green onions
In a 4 quart pot, boil diced potatoes until just soft, but not mushy (around 7-10minutes), drain and set aside
Peel and dice hard boiled eggs
In a large bowl, mix together onions, mustard, relish, salt and pepper, mayo, pickle juice, and sugar.
Once potatoes are done cooking, mix them and eggs into sauce mixture
Refrigerate until completely chilled through
Garnish with green onions
