Poppyseed Dressing and Spinach Berry Salad

A delicious mustard poppyseed dressing, made easily in the food processor and beautifully paired with a summer-y spinach berry salad.

Ingredients

Poppyseed Dressing

  • 1 cup Olive Oil
  • 1/3 cup Red Wine Vinegar
  • 1/2 Cup Red Onion
  • 1/2 tsp Ground Mustard
  • 1/2 TBS Poppyseed
  • 1/2-3/4 cup sugar
  • Salt a dash

Spinach Salad

  • 1 bag washed and prepared baby spinach
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup strawberries or blueberries
  • 1/4 cup feta crumbles
  • 1/4 cup slivered almonds

Instructions

  • Put everything in a food processor and pulse until processed to desired consistency.
  • Assemble salad and drizzle desired amount of poppyseed dressing over the top.
