Lemon Raspberry Shortbread Ice Cream Cookie Sandwich
Creamy Blue Bunny vanilla ice cream, layered with fresh raspberries, and sandwiched between two lemony shortbread cookies. Basically the best ice cream sandwich ever!

- 2 1/4 cups Blue Bunny Vanilla Ice Cream
- 1 cup fresh raspberries
Lemon Shortbread Cookies
- 2 Tbs lemon juice fresh
- 1 cup powdered sugar
- 1 cup butter softened
- 1/4 tsp salt
- 21/2 cups of flour
Preheat oven to 375
Using a hand mixer, mix together all ingredients. It will look like sand
Using your hands, push it together to form a ball
Roll it out on a smooth surface with rolling pin until about a 3/4 centimeter thick
Use a round cookie cutter or biscuit cutter (2 inch) to form cookies.
Put cookies on a cookie sheet lined with parchment or a baking mat (may need to use a spatula to transfer without them falling apart)
Bake on an ungreased baking sheet for 6 minutes. (do not brown)
Let cool on pan 1 minute
Move to a cooling rack
Using 1/4 cup of vanilla ice cream and a few berries, mix together and using biscuit cutter or cookie cutter form into same shape as cookies (See photo)
Put between 2 cooled cookies
