Stir dry ingredients together in a large bowl.
In a separate bowl whisk together milk, egg, melted butter, butter flavoring, and vanilla. Make sure it is combined well, as you do not want to over stir the wet and dry together later, as this makes tough, chewy pancakes.
Combine the wet and the dry, gently folding, and not over mixing.
Let batter sit for 5 minutes. This allows the baking powder to activate and do it's job, which will help make your pancakes fluffy.
Heat a griddle over medium heat.
Pour 1/3 cup batter into circles, if you want Mickey Mouse pancakes, add 1 Tbs more batter poured on each side, on top to form the Mickey Mouse ears.
Once bubbles appear, and pop, and the holes do not close as fast, flip the pancake.
Spread whipped butter over the top, sprinkle with a TBS of mini chocolate chips, and give each pancake a dusting of confectioner's sugar.
