Ingredients

  • 1 rack of ribs
  • 1 Tbs olive oil

Dry Rub

  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1 Tbs salt
  • 1/4 tsp ground black pepper

Spicy Honey BBQ Sauce

  • 3/4 cup honey
  • 1 1/2 cups ketchup
  • 1 cup chicken broth
  • 1/4 cup honey dijon mustard
  • 1 Tbs liquid smoke
  • 3 Tbs worcestershire sauce
  • 1/2 cup brown sugar
  • 1 Tbs El Yucateco Green Habanero Hot Sauce
  • 1 Tbs El Yucateco Red Habanero Hot Sauce

Instructions

  • Mix dry rub spices together, and set aside
  • Preheat oven to 200*
  • Brush olive oil over the top of the ribs.
  • Sprinkle a quick dry rub mixture over the ribs, and rub it in.
  • Wrap ribs in foil, and place on baking sheet. Bake for 3-4 hours. The longer you bake, the more tender they will become, but don't bake too long. You don't want them falling off the bones as you want to be able to grill them. While the ribs are cooking, mix together your BBQ sauce, instructions below.
  • Remove from foil and place on pre-heated grill (450 degrees)
  • Grill 3-4 minutes on each side
  • Brush BBQ sauce over the top
  • Grill for another minute or two on each side, then move to a cool part of the grill, close lid, and let continue to cook for 30 minutes to and hour at 250-300 degree heat. Baste if needed during that time.
  • Remove from grill, smother one more time in BBQ sauce, and let rest 5 minutes.
  • Serve with additional BBQ sauce

BBQ Sauce

  • Put all ingredients in a pot, and bring to a boil over medium-high heat, stirring continuously.
  • Boil for a minute, continue to stir
  • Turn down and let simmer 3-5 minutes, until thickened, and desired consistency is reached
  • Store in an airtight container in the fridge for up to a week.
