German Chocolate Chex Topped Cake Mix Cookies

Soft and tender chocolate cake cookies, topped with a caramel coconut chex mix are a perfect combination in this delicious German chocolate Chex cake cookie.

Ingredients

Cake Mix Cookies

  • 1 box Betty Crocker Devil's Food Cake Mix
  • 2 eggs
  • 1/3 cup vegetable oil

Chocolate Ganache

  • 1/2 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips

Caramel Chex Topping

  • 1 c brown sugar
  • 1/2 c butter
  • 1/4 c white Karo syrup
  • 1/4 t cream of tartar
  • 1/2 t salt
  • 1 t vanilla
  • 1/2 t baking soda
  • 1 cup coconut shreds
  • 1/2 cup pecan pieces
  • 4 cups corn Chex cereal

Instructions

Chocolate Cake Mix Cookies

  • Heat oven to 350
  • Mix cookie ingredients together.
  • Put 1 inch balls of cookie dough onto cookie sheet at least 1 inch apart.
  • Cook for 7-8 minutes
  • Remove from oven and put on cooling rack

Caramel Chex

  • Add brown sugar, butter, Karo syrup, cream of tartar, salt, and vanilla to pot.
  • Heat on medium heat, stirring until the sugar is no longer grainy.
  • Let it come to a very soft boil, then remove from heat immediately
  • Add baking soda, stir in, let foam up.
  • In a big bowl add Chex cereal, coconut, and pecans
  • Pour caramel sauce over the top and stir well
  • Set aside

Chocolate Ganache

  • In a microwave safe bowl heat heavy whipping cream for 45 seconds to a minute
  • Stir in chocolate chips and keep stirring until you have a glossy chocolate ganache

Assemble

  • Put a dollop of chocolate ganache on the top of each cookie.
  • Scoop out a 1/4 cup size of the caramel Chex mixture, and place on top of the ganache on the cookie
  • Let set 4-5 minutes
  • Enjoy

Notes

*You will have more Chex mixture than you need to top the cookies, just eat it! Or cut the amount down. I found it was easiest to get the right caramel consistency when I made it in this proportion.
