Chipotle Black Bean Burger Tacos

Flavorful, easy, and vegetarian, these chipotle black bean tacos are the perfect #MeatlessMonday or simple midweek meal option. You will love them!

Ingredients

  • 2 patties Black Bean Burger Gardein Chipotle Black Bean Burger Patties
  • 1/2 cup romaine lettuce sliced thinly
  • 1/4 red pepper sliced thin
  • 1 Tbs red onion chopped small
  • 2 Tbs cilantro
  • 1/4 cup cheddar cheese optional
  • 1/3 cup sweet corn
  • 1/2 Tbs butter
  • 4 corn tortillas
  • 1 Lime

Instructions

  • Prepare Gardein Chipotle Black Bean Burgers according to package directions
  • Rough chop the Gardein Chipotle Black Bean Burger
  • Chop red onion, red pepper, and cilantro into small pieces
  • In a skillet, melt butter, and heat corn tortillas
  • Sprinkle cheese over the top (optional)
  • Top with rough chopped Gardein Chipotle Black Bean Burger, corn, 1/2 the red onion, and 1/2 the red peppers.
  • Cook until the cheese melts
  • Remove from pan, top with romaine lettuce, additional red peppers, red onions, and cilantro.
  • Squeeze lime over the top, and enjoy!
