No Bake Cherry Cheesecake
Sweet cherries on top of a creamy cheesecake with an oreo cookie crust. This No Bake Cherry Cheesecake is so unbelievably easy to make, and only takes 30 minutes!

For the Crust
- 3 tbsp unsalted butter melted
- 1 cup crushed Oreo cookies Glutino if gluten free
For the Filling
- 2 8oz packages cream cheese
- 1 1/2 cups heavy whipping cream cold
- 3/4 tsp cream of tar tar
- 1/2 cup white sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
For the Topping
- 3 cups pitted cherries
- 1/2 cup water
- 1/2 cup sugar
- 2 tbsp corn starch
- 2 tbsp lemon juice
- 1 tbsp vanilla extract
For the Filling
In a stand mixer beat together cream cheese, sugar, lemon juice, and vanilla extract until smooth. Place into a second bowl and set aside.
With a clean bowl in a stand mixer, add whipping cream and cream of tar tar. Whip on med-low until it forms stiff peaks (about 3-5 minutes).
Add cream cheese to whipped cream until just mixed together.
Pour into springform pan and spread evenly.
For the Topping
Add cherries, sugar, vanilla extract, and lemon juice to a saucepan over medium heat.
Whisk together water and corn starch, and pour into saucepan.
Stirring frequently, bring to a boil. Once boiling, turn heat down until sauce begins to thicken.
Remove from heat and allow to cool.
Once cooled, pour over cheesecake.
Cover cheesecake and refrigerate for 2-3 hours before serving.
You can sub in gluten free chocolate "oreo" cookies (like glutino) for the same amount in this recipe.
If you don't have a stand mixer, an electric hand mixer should work.
