Pan-Seared Salmon With Cucumber-Lime Salsa

- 1 lime
- 1 small jalapeno seeds removed and finely chopped
- 1/2 English Cucumber diced
- 2 Tablespoons red onions diced
- 4 teaspoons chopped cilantro
- 1 teaspoon salt divided
- 1/2 Tablespoon Extra Virgin Olive Oil
- 4 6-ounce boneless salmon fillets (either Sockeye or Atlantic)
- 1/4 teaspoon black pepper
Remove the peel and pith from the lime. Finely slice the flesh of the entire lime.
In a bowl, mash the lime with a fork to release some of the juices.
Add in the jalapeno, cucumber, onion, cilantro and 1/2 teaspoon salt together in the bowl and stir to combine.
Set aside for 15-20 minutes to let the flavors combine and marinate together.
Heat the oil in a large nonstick skillet over medium heat.
Season salmon all over with the remaining salt and pepper.
Cook salmon, skin side up, until golden brown...about 4 minutes.
Carefully flip the salmon and continue to cook until flesh is opaque and flakes easily with a fork, about 4 minutes more.
Transfer salmon to plates and spoon cucumber-lime salsa over the top.
Serve with your favorite salad.
