Seared Watermelon Salad
This Seared Watermelon Salad is the perfect combination of sweet and savory. With juicy watermelon, creamy feta cheese, and refreshing mint, basil, and arugula, this light summer salad will be your new go-to!
Servings: 4 servings
- ¼ medium watermelon
- ½ cup crumbled or cubed feta cheese
- 2 cups arugula
- ¼ cup sliced red onion
- 2 Tbsp chopped mint
- 2 Tbsp chopped basil
- 1 Tbsp olive oil + more for cooking
- ¼ tsp each of salt and pepper
Cut watermelon into 1 inch thick slices and remove the rind. Lightly brush each piece with olive oil.
In a grill pan, saute pan, or on the grill, cook watermelon at medium/high heat until char lines develop or until watermelon lightly browns, about 3 minutes each side.
Remove from heat and chop watermelon into large chunks.
In large bowl, gently combine watermelon, feta, arugula, red onion, mint, and basil.
Whisk together 1 Tbsp olive oil, salt, and pepper. Gently combine with the rest of the salad. Serve warm or chilled.
