Summer Corn and Crab Chowder

Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 onion diced
  • 1 jalapeno seeded and diced
  • 2 corn cobs kernels removed
  • 1 potato peeled and diced
  • 1 lb lump crab meat
  • 2 green onions diced
  • 1 quart 32 oz chicken broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Heat olive oil in a large stock pot over medium heat. Add garlic and onion and cook until fragrant, about 4-5 minutes.
  • Add jalapeno, corn kernels, potato, crab meat, and green onions to the pot. Mix together and top off with chicken broth and heavy cream. Stir well. Season with salt and pepper and stir again.
  • Let simmer over medium-low heat for 15 minutes. Serve warm and enjoy!
