- 1/4 cup quick cooking grits
- 1 tbsp butter
- 1/4 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/4 cup refried beans
- 1 egg
- chopped tomatoes
- sliced avocado
- lime wedges
- minced cilantro
Prepare grits according to package directions. After cooking add black pepper, cumin, and butter, stir till combined. Set aside.
Heat refried beans in the microwave, covered, for thirty second intervals stirring in between till heating through. Set aside.
In a small frying pan cook egg as desired. (Images show an over medium egg)
To plate, spoon grits onto plate, top with beans, egg, tomato, avocado, and cilantro. Squeeze lime wedge over top.
