  • 4 apples 4 pears (for a total of about 4 lbs. fruit)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 Tbs lemon juice
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 2 Tbs cornstarch


  • 1/4 cup pumpkin seeds
  • 1/2 cup raw almonds
  • 1/2 cup rolled oats divided into two 1/4 cup portions
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 4 Tbs cold unsalted butter cut into small bits
  • 4 Tbs melted unsalted butter
  • Vanilla ice cream


  • Preheat oven to 350


  • Peel and core apples and chop into 1/2" pieces. Core pears and chop into 1/2" pieces. Combine fruit in a large bowl with spices, lemon juice, maple syrup, vanilla extract, and cornstarch, stir well to combine. Pour prepared fruit into a 2 quart baking dish.


  • In the bowl of a food processor combine pumpkin seeds, almonds, 1/4 cup rolled oats, cinnamon, and salt. Pulse until it resembles course flour.
  • Hamilton Beach has a Food Processorthat is perfect for this recipe.
  • Combine mixture with additional 1/4 cup rolled oats and stir well.
  • Add cold butter into nut/oat mixture breaking it up with your fingers to resemble small peas.
  • Pour topping over fruit, fully covering all fruit. Pour melted butter fairly evenly on top.
  • Bake in oven for 50 minutes until bubbly and brown.
  • Serve with vanilla ice cream


Bake until bubbly and brown, allow to cool slightly before serving.
