Ingredients
1.5lbsChicken thighs or chicken breast
Salt and Pepper
1Tbsolive oil
Sauce
1 ¼cuporange juice
¼cupchicken stock
½cupbrown sugar
2Tbsrice wine/mirin
2Tbswhite vinegar
¼cupsoy sauce
1teaspoonsriracha sauce
1tspsesame oil
2Tbsorange zest
2tspgarlicminced
1 1/2Tbsfreshly grated ginger
½tspsalt
1Tbscorn starchoptional

Instructions
Slice chicken into strips
Salt and pepper chicken
Put 1 Tbs olive oil in a large skillet, and heat over medium-high heat, add chicken to the pan and sear it on each side. Then remove from the pan. It won't be cooked through, that is okay.
Add all the sauce ingredients to the pan, except the corn starch, and whisk it all together.
Cook the sauce over medium high heat for 6-7 minutes until it starts to thicken, add corn starch if needed to help thicken, otherwise, leave it out.
Add chicken back in, and let it cook through. Sauce should continue to thicken while chicken cooks, another 5-6 minutes, and should be fully thickened by the time the chicken is cooked through.
Serve over rice, with a fresh veggie (broccoli, sugar snap peas, etc.) and garnish with sesame seeds.
