Ingredients

  • 1 lb large shrimp shelled and deveined
  • 1 inch of oil
  • ½ cup cornstarch
  • ½ tsp salt
  • 4 tsp cayenne pepper

Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce Mae Ploy
  • ½ tsp sriracha sauce
  • 1 tsp honey
  • 1/2 Tbs peanut butter
  • Green onion/Scallions for garnish

Instructions

  • Start by mixing your sauce ingredients together in a large bowl, then set it aside.
  • Preheat an inch of oil in the bottom of a large pot, over medium-high heat, to 375 degrees.
  • While oil heats, mix together cornstarch, salt, and cayenne pepper
  • Coat shrimp in cornstarch. mixture
  • When oil is hot, fry the shrimp until lightly brown. About 2-3 minutes
  • Remove shrimp from oil, and place on paper towel lined plate.
  • Then add shrimp to bowl sauce is in, and toss it all together
  • Serve in a lettuce lined bowl, top with chopped scallions.
