Ingredients
2Tbsbutter
1/2onioncut into slices, about 1 cup onion
1sheet puff pastrythawed, and cut into 24 equal pieces.
4dried figsdiced, about 1/4 cup
1/3cupCrumbled goat cheese
1/2Tbsdried thyme
1/2Tbsdried rosemary
Balsamic glazeto drizzle
Instructions
Preheat oven to 400.
In a skillet, melt butter over medium heat. Add in onion and stir to cover in butter. Stirring occasionally, allow onions to caramelize, about 8-10 minutes.
Spray a mini muffin tin with cooking spray. Place a piece of puff pastry in each of the muffin tins. Use a fork to poke holes in the bottom of each so they don’t puff too much.
Place caramelized onions, dried figs, goat cheese, and a pinch of thyme and rosemary on each.
Bake for 13-15 minutes until puff pastry is golden.
Remove from pan and drizzle with balsamic glaze. Serve warm.
