White Chocolate Macadamia Nut Cookies

Ingredients

  • 3/4 cup butter softened
  • 1/4 cup shortening
  • 3/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped macadamia nuts
  • 1 1/2 cups coarsely chopped white chocolate or white chocolate chips

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  • Beat in the eggs, one at a time
  • Stir in the vanilla extract.
  • Sift the flour, baking soda, and salt together
  • Gradually add flour mixture into the creamed mixture, but do not overmix
  • Fold in the macadamia nuts and white chocolate being careful not to overmix.
  • Chill for 5 -10 minutes in the fridge
  • Use a cookie scoop to scoop onto trays, leaving each scoop 2 inches apart
  • Bake for 10 minutes in the preheated oven, or until golden brown.
  • Cool 1-2 minutes on pan
  • Remove to cooling rack to cool the rest of the way and enjoy!
