Honey Dijon Chicken Cobb Salad

I love the Cobb salad ingredients and with the added honey Dijon twist, this salad is a winner!  Make this chicken Cobb salad for a lunch or dinner and feel happy and full for the rest of the day.

Ingredients

Chicken

  • 2 boneless skinless chicken breasts 1 lb
  • Salt and pepper
  • ½ tsp Paprika
  • ½ tsp garlic powder
  • 2 Tbs olive oil

Sauce/dressing

  • 2 tablespoons butter
  • 2 teaspoons minced garlic
  • cups heavy cream or whole milk
  • ¼ cup honey
  • 1 cup dijon mustard
  • 1 Tbs spicy brown mustard
  • ¼ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • salt and pepper to taste

The Rest

  • 6 cups Romain lettuce chopped
  • 4 hard boiled eggs sliced
  • 1 avocado sliced
  • 1 cup grape tomatoes halved
  • 4 pieces of bacon cooked and crumbled
  • 1/4 cup red onion diced
  • 1 cup sliced cucumber

Instructions

  • Place chicken between pieces of plastic wrap, and use a meat mallet to pound chicken until even thickness
  • Season with paprika, garlic powder, salt and pepper on both sides.
  • Put olive oil in a large skillet, and turn on to medium heat.
  • Cook chicken for 5-7 minutes on each side over medium heat until browned and cooked through. Transfer to a plate and cover to keep warm.
  • To make the sauce, keep the pan over medium heat and melt the butter. Add garlic and saute for a minute or so until fragrant. Add milk. Whisk in honey and dijon mustard and spicy brown until incorporated. Stir in paprika, cayenne pepper, and salt and pepper to taste.
  • Remove half the sauce, and set aside.
  • Chop chicken up, and toss in remaining sauce.

Assemble

  • Divide Romain lettuce between 4 bowls
  • Top the 4 bowls evenly with diced chicken, sliced hard boiled eggs, sliced avocado, halved tomatoes, crumbled bacon, diced red onion, and sliced cucumbers.
  • Serve with remaining honey mustard sauce as dressing.
