Greek Chicken Couscous bowl
A power bowl loaded with Greek chicken, couscous, and all the classic players such as cucumbers, tomatoes, red onions, tzatziki, olives, and more. Absolutely delicious.

Couscous
- 1 Tbs olive oil
- 1.5 cups israeli couscous
- 1.5 cups chicken stock
- 1 tsp salt
The Rest
- 1 cup tzatziki
- 2 avocados
- 1 cup Tomato grape or cherry, halved
- 1 cup cucumber sliced
- 1/2 cup red onion sliced
- 1/2 cup Kalamata Olives
- 4 Lemon wedge
In a large skillet, add olive oil, and turn to medium heat.
When oil is hot, add couscous, and toast until a nice golden brown.
Add chicken stock and turn down to medium low, stir in salt, and cover. Let simmer until liquid is absorbed, about 10-15 minutes.
Chicken
Mix marinade, and reserve half.
Take other half and put over chicken, marinate at least 30 minutes.
Bake or pan cook chicken in marinade until internal temperature reaches 165 degrees (approximately 20 minutes baking time at 350 degrees, or 7 minutes per side cooking stove top).
Assemble:
Assemble bowls by adding couscous to the bottom of 4 bowls. Divide chicken, tzatziki, avocados, tomatoes, cucumbers, red onion, Kalamata olives, and lemon wedges between the bowls.
Drizzle the marinade/dressing over the top and enjoy!
