  • 12 slices deli ham
  • 1 cup cheddar cheese shredded
  • 12 eggs
  • salt and pepper
  • 1/4 cup spinach thinly sliced
  • ½ cup sausage crumbles
  • cooking spray


  • Preheat the oven to 400 degrees F.
  • Coat a 12 cup muffin tin with cooking spray.
  • Press a slice of ham into each muffin well.
  • Divide the cheese evenly among the cups.
  • Crack an egg into each cup, then season with salt and pepper to taste.
  • Add spinach and sausage crumbles
  • Bake for 13-15 minutes or until yolks are at desired level of doneness.
