These pancakes are made with minimal effort and ingredients. They are a quick and delicious alternative to traditional pancakes.

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2-3 tbsp erythritol or any sweetener of choice
  • 1 tsp gluten-free baking powder
  • 5 large eggs
  • 1/3 cup almond milk unsweetened
  • 1/4 cup coconut oil
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Berries strawberries, raspberries and/or blueberries

Instructions

  • In a large bowl, whisk all ingredients together until smooth.
  • Preheat griddle to 300 degrees.
  • Pour 1/4 cup batter onto griddle and cook for 2 minutes or until golden brown.
  • Flip and cook 1-2 minutes, until browned on the other side.
  • Repeat with the rest of the batter.
  • Top with your favorite keto-friendly toppings
