Thai Red Curry Marinade

This red curry marinade, with coconut milk, has the perfect level of heat and signature Thai flavor .

Ingredients

  • 1/2 cup coconut milk
  • ¼ cup chicken stock
  • 1 1/2 tbsp Thai red Curry or to taste
  • 1 1/2 tbsp fish sauce
  • 1 tsp brown sugar
  • Pinch of chilli flakes
  • ¼ teaspoon salt
  • ¼ teaspoon ground ginger

Instructions

  • Add all ingredients to a jar or bowl.
  • Shake or whisk together.
  • Pour over chicken or pork in a container or zip top bag.
  • Marinate for 4-12 hours depending on cut of meat.
