Peach Burrata Salad

A fresh and delicious salad with sweet ripe peaches, creamy burrata cheese, mixed greens, toasted almonds, blueberries, and the best honey mint vinaigrette.

Ingredients

  • 2 cups Mixed Greens Spring Mix
  • 8 ounces Burrata
  • 2 Peaches ripe
  • 1/4 cup Toasted Slivered Almonds
  • 1/4 cup Blueberries

Dressing

  • 1 Tablespoon Olive Oil
  • 1 teaspoon mint chopped fine
  • 1 Tablespoon Honey
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 teaspoons Balsamic Vinegar

Instructions

  • In a small bowl, mix dressing ingredients together and set aside.
  • Assemble salad by filling a bowl with mixed greens.
  • Slice the Burrata in half
  • Pit and slice peaches
  • Add peaches, blueberries, and burrata to the salad
  • Sprinkle with toasted slivered almonds
  • Dress just before serving.
  • Enjoy
