- 2 cups Mixed Greens Spring Mix
- 8 ounces Burrata
- 2 Peaches ripe
- 1/4 cup Toasted Slivered Almonds
- 1/4 cup Blueberries
Dressing
- 1 Tablespoon Olive Oil
- 1 teaspoon mint chopped fine
- 1 Tablespoon Honey
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
- 2 teaspoons Balsamic Vinegar
In a small bowl, mix dressing ingredients together and set aside.
Assemble salad by filling a bowl with mixed greens.
Slice the Burrata in half
Pit and slice peaches
Add peaches, blueberries, and burrata to the salad
Sprinkle with toasted slivered almonds
Dress just before serving.
