Thinly slice the beef sirloin into pieces as well as green bell peppers, fresh mushrooms, and a large onion.

Add ingredients into the slow cooker and mix well. Cook on high for 2-3 hours or low for 4-6 hours.

Once filling is done, lay baked buns out on a baking sheet, top with filling, cover each with 2 slices of provolone cheese. Broil in oven for 2 minutes, or until cheese is melted.
