Stir fry Chicken

Ingredients

  • Sauce:
  • 1 tbs olive oil
  • 1 tsp garlic minced
  • 1/4 tsp ground ginger or fresh ginger
  • 1/2 tsp crushed red pepper flakes
  • 1/4 c apple juice
  • 1/3 c light brown sugar
  • 2 tbs ketchup
  • 1 tbs apple cider vinegar
  • 1/2 c water
  • 1/4 c soy sauce
  • 1 tbs cornstarch
  • Other:
  • 1/2 lb chicken diced
  • 1 c sugar snap peas
  • 1 c carrots cut into match sticks
  • 1/4 c water chesnuts
  • 1 c baby corn
  • 1/4 c sliced onion

Instructions

  • Brown chicken, remove from heat
  • Mix sauce ingredients
  • Bring sauce to a boil, add in vegetables, stir fry 1-2 minutes
  • Add chicken back in
  • Wok for 1-2 minutes, coating chicken and veggies completely
  • Serve over rice
