Make meat marinade, marinade in fridge for 5-10 mins.
Cook meat with chopped onion and pepper
Heat griddle to 325
Place corn tortillas on griddle
Place cheese on center of tortillas
When cheese starts to melt, add meat mixture
While heating, mix cilantro slaw sauce of lemon juice, olive oil, garlic powder, and salt, and mix in bowl with cilantro and cabbage
Add to hot taco, fold in half
Remove from heat
Add additional toppings: avocado, tomato, sour cream
