Pot Roast Sliders with Creamy Chipolte Sauce

  • 3-5 lb beef chuck roast
  • 2 Tbs olive oil
  • 2 tsp Kosher salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 Tbs minced onion
  • 1 Tbs garlic powder
  • 1 Tbs beef bouillion powder
  • 2 1/2 cups beef broth
  • 2 tablespoons corn starch
  • 2 tablespoons Worcestershire sauce

Creamy Chipotle Sauce

  • 1/4 cup plain greek yogurt
  • 2 Tbs chili sauce
  • 1 tsp chipotle hot sauce
  • 1 tsp creamy horseradish sauce


  • Rolls biscuits, or buns for serving the sliders (King's Hawaiian are great)


  • Salt and pepper your chuck roast.
  • Using tongs, sear roast on all sides of high heat, in a large skillet with olive oil.
  • Place pot roast in a 5 Qt or larger slow cooker or into an instant pot
  • Mix together all remaining ingredients and whisk together
  • Pour over Roast, and cook covered on low for 8-10 hours on low in a slow cooker, or for 90 minutes in an instant pot.

Creamy Chipotle Sauce

  • Mix all sauce ingredients together, stirring until smooth
  • Assemble by shredding pot roast, and draining off excess liquid, then spread a spoonful of creamy chipotle sauce on bun or roll, add meat mixture, and garnish with lettuce, etc.
