BBQ Pork Rib Gouda Griddle Tacos

  • 12 corn tortillas
  • 2 cups BBQ pork ribs cut small
  • 1 cup Gouda cheese I just cut 12 slices off my large block
  • 2 cups cole slaw mix
  • 2 cups guacamole
  • 1 cup of your favorite salsa


  • Put tortillas on griddle heated to 300 degrees
  • Add cheese, when it starts to melt, top with already heated BBQ rib meat.
  • Fold in half with spatula, and cook for an additional minute on each side to melt cheese and crisp up outside
  • Remove from griddle stuff with coleslaw, guacamole, and salsa
  • Enjoy immediately.
