Thai Noodle Bowl: Faux Pho

Thai and Vietnamese flavors fuse together in this sweet and spicy noodle bowl and it comes together in 15 minutes.

Ingredients

  • 1 package Ramen Not the flavor packet
  • 1 cup water
  • 1 1/2 tsp Sriracha Thai hot sauce
  • 1 Tbs soy sauce
  • 2 Tbs Sweet Chili Sauce I used Mae Ploy, but anything works
  • 1 Tbs honey
  • 1/2 a jalapeno
  • 1-2 sweet mini peppers
  • 1/2 lime juiced
  • 1/2 cup broccoli florets

Toppings

  • 1/4 cup cilantro
  • 2 green onions chopped

Shrimp

  • 1/2 lb shrimp
  • 1 tbs butter
  • 1 tbs honey
  • 2 Tbs Sweet Chili Sauce
  • 1/2 lime juiced

Instructions

  • Clean and devein shrimp
  • Put cup of water in a sauce pan, and bring to a boil
  • Add in sriracha, honey, lime juice, soy, and sweet chili sauce
  • Cut jalapeno, and remove seeds, add to pot
  • Add in broccoli florets and sliced sweet mini peppers
  • Add in noodles
  • Cook until noodles are soft.
  • Meanwhile, melt butter in small fry pan, and add shrimp, drizzle honey over top, alone with sweet chili sauce and lime juice. Saute until pink, and remove from heat. Reserve pan juices.
  • When noodles are soft, toss shrimp and pan juices into noodles, top with fresh cilantro and green onion, and serve immediately.
