Hawaiian Haystacks

Hawaiian haystacks are a combination of your favorite toppings with a creamy chicken sauce served over rice.

Ingredients

  • 1.5 lbs chicken cooked and shredded or cubed
  • 1 tsp garlic salt
  • salt and pepper to taste

Hawaiian Haystack Gravy

  • 4 Tbs butter
  • 1/2 cup flour
  • 16 ounces chicken stock
  • 3/4 cup sour cream
  • salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/4 tsp Other seasonings As desired add a pinch of cayenne, paprika, garlic powder, onion powder

Toppings

  • Pineapple
  • Olives
  • Cucumbers
  • Tomatoes
  • Cheese
  • Chow Mein Noodles
  • Crispy onions
  • 4 cups cooked rice

Instructions

  • Start rice cooking according to package directions
  • In a medium size sauce pan on medium-high heat, melt butter, add in flour, and stir together, then whisk in the chicken stock and salt and pepper, whisking until smooth
  • Add sour cream and heavy cream, and turn down to a simmer, whisk it together, and keep an eye on it so it doesn't scortch
  • Cook the chicken with a little water, and season with garlic salt and salt and pepper to taste.
  • Chop up toppings, and serve everything over the rice. Layering rice, gravy, chicken, and toppings of choice!

Notes

Notes: Taste your gravy, and adjust the seasoning accordingly. I like to add a little cayenne for heat, or some garlic or onion powder for a little more flavor. But base this on your family and their preferences.
