(Healthier) Ice Cream Cookie Sundaes

These delicious peanut butter fudgey cookies, covered in creamy vanilla ice cream, and topped with hot fudge sauce are perfect for family game nights, and are actually healthier than they look!

Ingredients

  • Vanilla ice cream
  • Hot fudge sauce

Peanut Butter Fudge Cookies

  • 1/2 cup Peanut Butter
  • 1/2 cup Chocolate Almond Butter
  • 2 Tbs honey
  • 4 Tbs dark brown sugar
  • 1/2 tsp vanilla extract
  • a pinch of salt
  • 1 tsp baking soda
  • 1 egg
  • 3/4 cup quick oats
  • Chocolate chips milk chocolate or semi-sweet

Instructions

  • Preheat oven to 350 degrees
  • Mix together peanut butter, chocolate almond butter, honey, and brown sugar
  • Add in vanilla, pinch of salt, and baking soda
  • Beat in an egg
  • Stir in quick oats
  • Form into 3/4 inch balls and put on a non-stick baking mat or non-stick sprayed cookie sheet and press flat
  • Bake 7-9 minutes until no longer jiggly, but not burnt. Be careful, it can burn quickly, so base cooking time off your oven, and check at about 6 minutes.
  • Remove from oven, let cool for 3-5 minutes, then move to cooling rack and let cool completely
  • Serve with a scoop of ice cream over top the cookie and drizzled on hot fudge sauce!
