Easy Banana Bread Muffins

Tender, moist and delicious banana bread muffins.

Ingredients

  • 3 bananas brown mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg whisked with a fork
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch of salt
  • 1 1/2 cups flour

Instructions

  • Preheat oven to 350 degrees F.
  • In a bowl, mix all ingredients by hand until well incorporated
  • Pour into a greased muffin tin, makes 12
  • Bake 25-30 minutes or until browned and toothpick inserted in middle comes out clean (check at about 25 minutes)
  • Remove from pan, and cool on a cooling rack.
