Ingredients

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon optional
  • 8 oz Cool Whip or whipped cream
  • 3 cups fresh strawberries hulled and chopped
  • 2 cups fresh blueberries or blueberries and raspberries
  • Mint and more fresh berries for garnish

Instructions

Beat Cream Cheese Mixture:

  • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. And the lemon zest, if using.

Fold in Whipped Topping:

  • Gently fold or mix in the Cool Whip until fully incorporated and fluffy.

Add Berries:

  • Carefully fold in strawberries, and blueberries until combined.

Chill and Serve:

  • Refrigerate for 20 minutes before serving for the best texture and flavor. But don’t mix up more than 2 hours before serving for best results
    Garnish with fresh berries and mint leaves to make it look nice.
