Ingredients

  • 1 pound Trader Joe's pizza dough makes 2 flatbreads
  • cup pepper jelly
  • 1 cup fresh blueberries
  • 4 ounces goat cheese crumbled
  • ¼ cup fresh basil leaves torn or sliced

Instructions

  • Preheat your Gozney pizza oven according to manufacturer instructions.
  • Stretch and shape the pizza dough into a flatbread shape on a lightly floured or corn meal covered surface.
  • Transfer the dough to a pizza peel and partially cook the flatbread in the pizza oven until lightly set and beginning to brown.
  • Remove the flatbread from the oven.
  • Spread the pepper jelly evenly over the partially cooked crust.
  • Scatter the blueberries across the flatbread.
  • Crumble the goat cheese evenly over the top.
  • Return the flatbread to the pizza oven and cook for 2-3 minutes, rotating frequently to ensure even cooking and prevent burning.
  • Once the crust is golden and crisp and the goat cheese is slightly softened, remove the flatbread from the oven.
  • Top with fresh basil.
  • Slice and serve immediately.

Notes

Oven Instructions
If you don't have a pizza oven, bake in a 450°F oven for 8-12 minutes, or until the crust is golden and crisp.
Serving Suggestions
For an extra-special finish, drizzle with hot honey or balsamic glaze just before serving.
Storage
This flatbread is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days and reheated in the oven.
