Cajun Salmon and Shrimp

Ingredients

For the Seafood:

  • 4 salmon fillets about 6 oz each
  • 1/2 lb large shrimp peeled and deveined
  • 2 Tbsp Cajun seasoning store-bought or homemade
  • 2 Tbsp olive oil
  • 2 Tbsp butter

For the Creamy Spinach Cheese Sauce:

  • 3 cloves garlic minced
  • 1/2 cup red onion minced
  • 1 Tbsp Flour optional
  • 2 cups fresh spinach roughly chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp Cajun seasoning optional, for extra heat
  • Salt and pepper to taste

Instructions

Step 1: Prepare and Cook the Seafood

  • Pat salmon fillets and shrimp dry with paper towels. Season both with Cajun seasoning.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear salmon, (if skin on, cook skin-side down first), for 4-5 minutes per side, until golden and cooked through. Remove and set aside.
  • In the same skillet, cook shrimp for 2-3 minutes per side, until pink and opaque. Remove and set aside.

Step 2: Make the Creamy Spinach Cheese Sauce

  • In the same skillet, add garlic and shallot. Sauté until fragrant, about 1 minute.
  • Sprinkle with flour if you want a thicker sauce. Stir in spinach and cook until wilted.
  • Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Bring to a simmer.
  • Stir in Parmesan and mozzarella until melted and smooth. Season with salt, pepper, and additional Cajun seasoning if desired.

Step 3: Bring It Together

  • Return salmon and shrimp to the skillet. Spoon sauce over the seafood and let simmer for 1-2 minutes to meld flavors.
  • Serve hot, garnished with fresh parsley if desired.
