  • 14 oz kielbasa or smoked sausage
  • 4-6 potatoes peeled and diced
  • 1 small onion chopped
  • 8 oz cheddar cheese shredded
  • 14 ounces chicken broth (more if needed to cover potatoes)
  • 3 tablespoons cornstarch
  • cup sour cream
  • 1 tablespoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt

Instructions

  • Make the sauce base:
In the bowl of your slow cooker, whisk the cornstarch into the chicken broth until fully dissolved and smooth. Then whisk in the sour cream, minced garlic, black pepper, and sea salt until combined.
  • Prep the ingredients:
Cut the onion, potatoes, and smoked sausage into bite-sized pieces. Add them to the slow cooker, stirring to coat everything evenly in the sauce mixture.
  • Adjust liquid if needed:
If the potatoes and sausage aren’t completely covered, add just enough extra chicken broth to submerge them. This ensures the potatoes cook evenly and become tender.
  • Add cheese and cook:
Sprinkle the shredded cheddar cheese evenly over the top. Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the potatoes are tender and the sauce is creamy and thickened.
  • Stir and serve:
Give everything a good stir before serving so the cheesy sauce coats every bite.

Notes

Potatoes can vary in size and starch content — if your mixture seems too thick, stir in a bit more broth near the end of cooking.
