- 1/2 cup mayo
- 1/2 cup sour cream
- 1/2 cup milk or buttermilk
- 1/4 cup chipotle peppers in adobo sauce blended up so it is smooth.
- 1/4 cup lime juice
- 1 Tablespoon vinegar
Spices:
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon dill weed
- 1 teaspoon chives
- 1/2 teaspoon parsley
- 1 teaspoon chipotle powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Combine all ingredients and whisk or blend until smooth and creamy.
Refrigerate for 30 minutes to allow flavors to blend.
Taste, and adjust to your preference (see notes)
- Adjust the Heat Level – If you prefer a milder dressing, start with half a chipotle pepper and add more as needed. For extra spice, add an additional pepper or a dash of cayenne.
- Blend for Smoothness – Using a blender or food processor ensures a smooth and creamy dressing that’s evenly mixed. But you can just whisk it too.
- Let It Rest – Allow the dressing to sit in the fridge for at least 30 minutes before serving. This helps the flavors meld together beautifully.
- Thin It Out If Needed – If the dressing is too thick, add a splash of buttermilk or milk until you reach your desired consistency.
