Cottage Cheese Pancakes

Quick and simple cottage cheese pancakes make for a high protein pancake breakfast that comes together in no time.

Ingredients

  • 1 1/2 cups cottage cheese
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 1/2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1 cup flour oat flour works well
  • Cooking oil or cooking spray

Instructions

  • In a blender add cottage cheese, eggs, vanilla extract, and sugar, blend well.
  • Stir in baking powder and flour. Do not over mix
  • Preheat a skillet over medium heat, and spray with cooking spray, or add and heat some cooking oil.
  • Spoon in 3 Tbs of batter for each pancake, and fry in the oil on each side until golden brown in color.
  • Serve warm with the toppings of your choice.
