Cottage Cheese Pancakes

- 1 1/2 cups cottage cheese
- 4 eggs
- 1 tsp vanilla extract
- 1 1/2 Tablespoons sugar
- 1 Tablespoon baking powder
- 1 cup flour oat flour works well
- Cooking oil or cooking spray
In a blender add cottage cheese, eggs, vanilla extract, and sugar, blend well.
Stir in baking powder and flour. Do not over mix
Preheat a skillet over medium heat, and spray with cooking spray, or add and heat some cooking oil.
Spoon in 3 Tbs of batter for each pancake, and fry in the oil on each side until golden brown in color.
Serve warm with the toppings of your choice.
