- 4 salmon fillets about 6 oz each
- 2 cups carrots cut
- 2 cups green beans trimmed
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Preheat the oven: Set to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
Make the glaze: In a small bowl, whisk together maple syrup, Dijon mustard, and olive oil until smooth.
Prep the carrots and green beans: Toss the carrots and green beans with half of the maple-Dijon mixture. Spread them on the baking sheet and roast for 10- 15 minutes, until starting to become tender.
Add the salmon: Remove the pan from the oven, push carrots to the sides, and place the salmon fillets in the center. Brush salmon generously with the remaining glaze.
Roast everything: Return to the oven and bake for 8–10 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve: Spoon extra glaze from the pan over the top and serve hot with the roasted carrots and green beans.
